Botanical aspects: This precious spice was for a long time the monopoly of Dutch merchants. Cloves" contain an exceptional amount of essential oil (18-20%), particularly eugenol. They are the dried flower buds of the Clove tree, a large evergreen native to the Moluccan Islands.
