Botanical aspects: Bergamot does not exist in the wild and is probably the result of grafting. This small tree (3 to 4 m tall) is grown mainly in Italy, Spain and West Africa. Bergamot has been appreciated in perfumery since the 17th century; its lemony, slightly pungent note is the basis of the Eau de Cologne impériale created by Guerlain for Empress Eugénie.
